For this first loaf - I’m keeping the basic country dough infrastructure and time tables while adding a few inclusions. The next loaf will stay on this path but take things further away from the old school country loaf model and deeper into uncharted territory. Using the basic formula as a north star initially will give valuable context as we head to the outerlands. The aim is to gain new perspectives; learn, and evaluate.

Wheat germ, cream of wheat, and flax meal: a few ingredients I grew up eating as my thoughtful Mother was always on the health tip. I loved them all, thanks Mom. This bread has excellent keeping qualities from the long rise, scald, and flax inclusions. Super moist and slightly ‘whole food’ style sweet from the germ: it has a tighter crumb appropriate for the base on which we build a few classic toasts (tartines).
